Garlic - To Roast Or Not To Roast That Is The Question?

Roasted garlic is able to do an amazing quick change artist. Before garlic is roasted it has a very harsh taste, and will literally change you if you bite into it in it's raw state, but once you cut the top off add a few drops of olive oil and some seasoning and put it in a garlic roaster or in foil if you don't have a roaster, and cook it for either 27 minutes in the roaster or 1 hours in the oven, the change in the garlic is very apparent.
