Traditional English Cookery
Much of what we know, historically, about English cookery originates from the grand houses, as only these recipes were written down in recipes. The food of the 'common man' had to rely on oral tradition to be transmitted through the ages. As a result we know far more about the cookery of the grand houses than the cookery of the common man. The region has been occupied since ancient times, including a Celtic period (from about 450 BCE) and a Roman period (from 9 BCE until the 4th century), but the state traces its roots to the Kingdom of Hungary which was established by Magyar kings in the 9th and 10th centuries. It is also a nation that has a very rich and long maritime tradition, and many links to the wider world. As a result, Portuguese cuisine is surprisingly different from that of other European countries, and is influenced by contacts with the East Indies, the Far East, Africa and the New World. Jerk Chicken Recipe
The secret behind jerk is "Jamaican jerk spice". This is used as a marinade, and rubbed into the meat before cooking. It is best to make some light cuts in the meat, rub the jerk spice into those and the meat generally, and then marinade the meat over night in the 'fridge, before cooking the following day. Jamaican jerk spice is actually a mixture of several different spices, which in combination produce a fiery but tasty flavor. The ingredients in jerk spice include pimento (also known as "Jamaican allspice"), Scotch bell peppers, as well as cinnamon, cloves, garlic, nutmeg and thyme. Chopped onions and scallions may also be added to the jerk spice mixture.
