A Beautiful Beef and Herb Recipe

The flavours that some herbs give combined with other foods just are beyond description sometimes, especially is they are fresh and grown away from commercial enterprises. This recipe was taught to me from my father who was a professional Cordon Bleu Chef in one of the top London Hotels. Using Herbs on a Picnic

Soak the gammon overnight to reduce its saltiness. Place the gammon in a large saucepan, add the cider to cover, plus the cloves, sage and bouquet garni. Bring to a boil and then cover and simmer for 1 1/4 hours, turning the meat occasionally. When the gammon is cooked, strip off the skin but leave a layer of fat. Place the joint in a roasting pan, score a diamond pattern over it and decorate with brown sugar and more cloves.

Gomoku Sushi

To prepare ingredients - Shiitake mushrooms and kampyo: cut off stems of mushrooms and cut caps into thin strips. In a saucepan make 2/3 cup dashi, add mushrooms and kampyo and boil with a lid placed right on the ingredients for 3-4 minutes. Add sugar and mirin and boil for another 5 minutes, then add soy sauce. When kampyo is well flavored, remove from saucepan. Continue to cook mushrooms until broth is all gone. Cut kampyo into 1/2 inch long thin strips.
