I'm a huge fan of skirt steak. I have about 3 dozen recipes devoted solely to this super tasty, inexpensive cut of beef. I like buying those big ones in the store that look like a whole side of beef. They're usually around 6 pounds, and well worth the 18 dollars you'll pay for it on sale. My favorite skirt steak recipe is simply grilled to perfection with a little bit of spice, and topped with a wonderful spicy version of mango chutney I make.
