The beauty of a good seafood salad recipe is that it allows you to include your favorite kinds of seafood all in one dish. The different flavors can play off of one another, giving your mouth and body plenty to enjoy. One great recipe is for a Thai seafood pasta salad which is full of flavor and a little heartier than your typical lettuce infused salad. For this salad you need 1/3 cup cider vinegar, 1/4 cup peanut butter, two tablespoons sugar, 2 1/4 cups chilled cooked shrimp and scallops, 1/2 cup sliced scallions, one cup chopped cilantro, 1 teaspoon minced garlic, two tablespoons soy sauce, one tablespoon fresh ground ginger, 1/4 cup hot water, two thinly sliced medium red bell peppers, three thinly sliced and seeded cucumbers, and seven cups chilled cooked pasta.
