A Beautiful Beef and Herb Recipe

The flavours that some herbs give combined with other foods just are beyond description sometimes, especially is they are fresh and grown away from commercial enterprises. This recipe was taught to me from my father who was a professional Cordon Bleu Chef in one of the top London Hotels. Using Herbs on a Picnic

Soak the gammon overnight to reduce its saltiness. Place the gammon in a large saucepan, add the cider to cover, plus the cloves, sage and bouquet garni. Bring to a boil and then cover and simmer for 1 1/4 hours, turning the meat occasionally. When the gammon is cooked, strip off the skin but leave a layer of fat. Place the joint in a roasting pan, score a diamond pattern over it and decorate with brown sugar and more cloves.

Gomoku Sushi

To prepare ingredients - Shiitake mushrooms and kampyo: cut off stems of mushrooms and cut caps into thin strips. In a saucepan make 2/3 cup dashi, add mushrooms and kampyo and boil with a lid placed right on the ingredients for 3-4 minutes. Add sugar and mirin and boil for another 5 minutes, then add soy sauce. When kampyo is well flavored, remove from saucepan. Continue to cook mushrooms until broth is all gone. Cut kampyo into 1/2 inch long thin strips.

Jerk Chicken Recipe

The secret behind jerk is "Jamaican jerk spice". This is used as a marinade, and rubbed into the meat before cooking. Hungarian Goulash Recipes

Many Hungarian dishes are flavored using paprika, and the country's most famous recipe, Goulash (known in Hungary as "Gulyas" or "Gulyasleves") is no exception. Goulash, known in Hungary as "Gulyás" or "Gulyásleves" is a traditional recipe that dates back, or at least traces it origins, perhaps a thousand years or more. The dish was traditionally prepared and eaten by cattlemen and herders living on the Great Hungarian plain (which extends across the South and East of Hungary, as well into large areas of neighboring countries), and thus given the nomadic lifestyle of these men, had to prepared using ingredients and cooking materials that they carried with them, or which were locally available in the countryside.

Green Tea Cream Puffs

Instructions: Custard: In a small saucepan, combine 1/2 cup sugar, 5 tablespoons flour, a pinch of salt and a 1 tablespoon of matcha powder. Stir in milk, a little at a time, until smooth. Bring to a boil over medium heat, stirring constantly. Boil 60 seconds, then pour a small amount of hot liquid into the 2 egg yolks, and stir. Then return now heated egg yolks to saucepan and stir, over heat, until mixture starts to bubble again. Remove from heat, add vanilla. Cover and chill in refrigerator. Preheat oven to 450 degrees. This step is done first so that custard can be properly chilled by the time the pastry is ready for filling.

In Part 1 of Adventures in Eating - Unusual Recipes, I told you how I had gotten myself into a cheesy corner. Briefly, I had just published a new website that contained a recipe for Velveeta fudge. The response I got from that recipe was, to put it politely, strong. Now, I had never actually tried this recipe, so I didn't have much of a rebuttal.
